Fettuccine Alfredo (local style :P)

I experimented a little and came up with this recipe. though i love the simplicity of alfredo sauce. but onion adds an amazing flavor to it.






  • Pour water into a large pasta pot or stockpot. Be careful not to use too little water or the pasta will not cook properly. Place the pasta pot on a burner on the stove.
  • Add about 3 pinches of salt to the water in the pasta pot. The salt will help bring out the pasta's natural flavors and give the pasta more texture.

  • Place oil, such as olive oil, in the pasta pot. This small amount of oil prevents the pasta from sticking to itself, as well as to the pasta pot.  Add a teaspoon of vinegar too.


  • Turn the stove burner onto high heat and bring the water in the pasta pot to a rolling boil
  • Add the dry fettuccine pasta to the boiling water in the pasta pot. 
  • Cook the fettuccine pasta for approximately 10 to 12 minutes. Cooking time may vary depending on how tender you like your pasta.
  • Drain the cooked pasta in a colander over a sink. Shake the colander slightly to remove any excess water. add a little cooking oil again.




  • For the sauce:

    I used cheddar cheese for this sauce, but mozzarella works far better , or a little of both. Melt cheese in a double boiler, also add a little milk or cream to it.



    Add around 2 tablespoons butter to it. I used garlic butter. If you dont have garlic butter but like garlic flavor you can add crushed garlic to the sauce.



    Add more milk, not too much just so that you dont lose the cheese flavor. Add chicken powder or salt and pepper if you dont have chicken powder at home. you can also use knorr chicken cube or yakhni powder.



    Your sauce would be thin by now. in a separate bowl, combine flour with water make a paste. now add one teaspoon of this paste to the white sauce. and keep stirring. Repeat this step, adding the flour paste till you get the right consistency of white sauce.

    Finally add the sliced onions to the sauce. Turn off the heat.



    For chicken, boil it add garlic, salt and pepper. I like it simple. Slice it and dice in the pasta. add raw onions and sauce. Sprinkle chopped parsley or coriander. Serve!!
